Recipe: Homemade Durian Pancake/Crepe

Knock...knock...It's a Durian Season Now... Durian is everywhere...*wooohoooo*.

Let's make our own Homemade Durian Pancake at home. In my hometown, Medan, the price is quite pricey...for 1 "small" (when I say small, it is really smallllll.... damn it) pancake costs at least Rp8,000 (SGD1.00). [FYI: Nasi campur (main couse) only costs about Rp5.000/pack in my howetown, so let's you do your own comparison lol]

For Crepe:
  • 70gr all purposes flour
  • 10gr cornstarch
  • 40gr castor sugar
  • 250gr milk
  • 20gr salted butter
  • 2 eggs yolk
For fillings
  • Durian flesh ( you may substitute mango for durian)
  • 150ml fresh cream- whipped until soft peak forms

For Crepe:
  1. Melt the butter together with half of the milk + sugar
  2. Set aside from the stove, pour the egg yolk inside and whisk to mix well
  3. Sieve all the dry ingredients in other bowl, and pour the wet ingredients inside. Mix... mix...mix well
  4. Cover the batter and stand for at least 1 hour
  5. Pour a scoop of the batter in the centre of the non-stick pan ( do not add oil) and move the pan around the batter to coat the side
  6. Once the colour changed and batter turn hard, crepe is ready and remove it immediately. You don't need to flip it, just fry for one side only.
How to prepare the Homemade durian pancake:
  1. Add 1 tbsp whipped cream in the centre of the crepe, and followed by durian flesh on the top ( or you can mix the whipped cream together with the durian flesh in other bowl)
  2. Wrap the crepe gently and store in fridge for better taste. Enjoy your Homemade Durian pancake :)
